Ingredients for 4 servings:
- 350 g pork fillet(s)
- 300 g chicken breasts
- salt and pepper
- 1 tbsp oil
- 600 g green beans (possibly frozen)
- 50 g bacon (lean breakfast bacon)
- 2 onions
- 30 g flour
- ½ bunch parsley
- 30 g butter
- ¼ liter vegetable broth
- ¼ liter of milk
- 1 egg yolk
- 1 processed cheese corner
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Pre-cook the beans for 10 minutes. Cut the bacon into strips and fry. Peel the onions, cut into wedges, and sauté briefly. Wash and chop the parsley. Toss the beans in the bacon fat and season with salt and pepper. Sauté the flour in the hot fat. Stir in the broth and milk, stirring constantly; bring to a boil. Simmer for about 3 minutes. Melt the cheese in the sauce. Whisk the egg yolk and a little of the sauce, then stir into the remaining sauce. Do not cook any further! Place the beans in a greased baking dish. Slice the fillets and arrange on top. Pour the sauce over the beans and bake in a preheated oven at 225 degrees Celsius for 15-20 minutes.
