Ingredients
 

  • 1 piece Clove of garlic
  • 1 piece Onion
  • 12 piece Cherry tomatoes
  • 100 g Baby spinach
  • 200 g Tofu
  • 1 tbsp Balsamic vinegar
  • 1 tsp Mustard
  • 1 tbsp Liquid honey
  • 2 tbsp Olive oil
  • Salt and pepper for seasoning
  • 2 tbsp Vegetable oil
  • 1 pack Uncle Ben's Natural Rice & Quinoa Mediterranean

Instructions
 

  • Peel the garlic and onion. Halve the onions and cut into wedges. Finely chop the garlic and wash the tomatoes and spinach. Remove the tomatoes from the stalk and cut in half. Cut the tofu into wide sticks. Mix the balsamic vinegar, mustard, honey and olive oil vigorously and season with salt and pepper.
  • Heat vegetable oil in a pan and fry the tofu on all sides over medium heat for about 6 minutes. Add onions, garlic and tomatoes and fry for another 3 minutes. Add the spinach, mix everything together and season with salt and pepper. Heat and serve rice according to package instructions.
  • Arrange the vegetables and the tofu sticks next to it, sprinkle everything with roasted onions and serve with the honey mustard sauce.
  • Tip 4: If you like, you can garnish everything with basil and sprinkle with fried onions.
