Ingredients for 4 servings:
- 1 red bell pepper(s)
- 1 bell pepper(s), green
- 1 cucumber(s)
- 1 onion(s) (vegetable onion)
- 2 beefsteak tomatoes
- 3 tbsp balsamic vinegar
- Salt
- pepper
- 3 cloves garlic
- 6 tbsp olive oil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Dice the bell peppers and onion. Peel the cucumber, halve it lengthwise, scoop out the flesh with a spoon, and finely dice the flesh. Peel and deseed the tomatoes, and finely dice the flesh. Combine everything in a bowl. In a separate bowl, mix the balsamic vinegar with salt and pepper and press in the peeled garlic cloves. Whisk in the olive oil. Pour the sauce over the vegetables, mix everything together, and let it sit until ready to serve.
