Ingredients for 10 servings:
- 1 kg pork ribs or pork belly without rind
- 2 tbsp, heaped fennel seeds
- 2 tbsp, heaped paprika powder, smoked
- 2 tbsp, levelled pepper
- 4 tsp, leveled sea salt
- 2 tsp, levelled cumin powder
- 2 tsp, heaped garlic powder
- 2 tsp, heaped onion powder
- 1 tsp, leveled chili powder
- 2 tbsp honey
- 2 bottles of barbecue sauce, 250 ml each

First, prepare the rub. To do this, grind the fennel seeds, salt, and pepper into a powder and mix with the remaining spices. Rub the ribs with oil, then generously sprinkle with the rub, and massage everything in. Any excess rub can be stored in a tightly sealed container. Wrap the ribs tightly in wax paper and then in aluminum foil, or place them in a covered roasting pan. Bake in the oven at 150°C (300°F) with top/bottom heat for about 3 hours. When unwrapping the ribs, be careful not to lose any of the cooking juices. Mix this with the barbecue sauce and honey. If you like, you can remove the bones from the ribs at this point. Portion the meat and brush it with the sauce before grilling. Since the ribs are pre-cooked, they only need a maximum of 5 minutes to grill.
