For the marinade

  • 1 tbsp Fish sauce
  • 1 tbsp Oyster sauce
  • 4 tbsp Soy sauce
  • 0,5 tbsp Rice wine vinegar
  • 0,5 tsp Ginger
  • 0,5 tsp Ground coriander
  • 1 Pc. Chilli pepper
  • 3 Pc. Clove of garlic

For smoking

  • Beech flour
  • Garlic powder
  • Ground ginger
  1. The recipe is simple, the secret lies in smoking and indirect grilling with your own smoking mixture.

The marinating

  1. Mix the ingredients of the marinade, put the legs in a plastic bag for approx. 24 hours. Mix regularly and massage in the marinade.

Grilling and smoking

  1. Mix the beech flour and the spices well and place in a small aluminum bowl. Now smoke the chicken thighs at approx. 40-50 degrees for 1 hour with indirect heat.
  2. Then grill indirectly at approx. 100 degrees for 2 hours. Turn it 1-2 times.
