For the marinade
- 1 tbsp Fish sauce
- 1 tbsp Oyster sauce
- 4 tbsp Soy sauce
- 0,5 tbsp Rice wine vinegar
- 0,5 tsp Ginger
- 0,5 tsp Ground coriander
- 1 Pc. Chilli pepper
- 3 Pc. Clove of garlic
For smoking
- Beech flour
- Garlic powder
- Ground ginger
- The recipe is simple, the secret lies in smoking and indirect grilling with your own smoking mixture.
The marinating
- Mix the ingredients of the marinade, put the legs in a plastic bag for approx. 24 hours. Mix regularly and massage in the marinade.
Grilling and smoking
- Mix the beech flour and the spices well and place in a small aluminum bowl. Now smoke the chicken thighs at approx. 40-50 degrees for 1 hour with indirect heat.
- Then grill indirectly at approx. 100 degrees for 2 hours. Turn it 1-2 times.
