Ingredients for 4 servings:
- 1 tbsp tomato paste
- 450 ml vegetable stock
- 200 g rice noodles
- 360 g pork schnitzel
- salt and pepper
- 2 tsp vegetable oil
- 1 tsp gyro seasoning
- 4 tomatoes
- 300 g coleslaw without cream

Combine tomato paste and broth in a pot. Add rice noodles and simmer, covered, for about 10 minutes. Pat pork schnitzel dry, cut into strips, and season with salt and pepper. Heat oil in a pan and fry the pork strips for about 5 minutes until crispy. Season with gyro seasoning. Wash and dice tomatoes. Drain rice noodles. Stir the diced tomatoes and rice noodles into the gyro and serve with coleslaw. I also make a delicious tzatziki sauce.
