Gyros – Tsatsiki – Muffins

Ingredients for 6 servings:

  • 250 g meat (gyros), ready-fried
  • 1 onion(s)
  • 250 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 pinches of pepper
  • 1 tsp salt
  • 1 egg(s)
  • 60 ml oil
  • 200 g herb quark (tzatziki)
  • 120 ml buttermilk
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat oven to 190°C and grease a muffin tin well. Cut the gyro and onion into very small pieces. Combine flour, baking powder, baking soda, pepper, and salt in a bowl. In a second bowl, beat the egg, oil, tzatziki sauce, and buttermilk until frothy. Add the flour mixture, gyro, and onion and stir in. Pour batter into the muffin cups and bake for about 20-25 minutes. Tip: It’s best to bake these muffins without paper baking cups.
