Ham and Egg Salad for Brunch

Ingredients for 4 servings:

  • 6 eggs, hard-boiled
  • 60 g ham, cooked, finely diced
  • 1 spring onion(s), finely chopped
  • 1 tbsp pepper(s), finely chopped
  • 1 tbsp parsley, chopped
  • 3 tbsp mayonnaise
  • 2 tsp mustard (Dijon mustard)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Quarter the peeled eggs and roughly chop them. Season with salt and pepper and mix with the other finely chopped ingredients. In a second bowl, combine the mayonnaise and mustard and stir into the salad. Let it sit for a while.
