Homemade iced tea

Ingredients for 5 servings:

  • 800 ml water
  • 8 tea bags, black (Ceylon blend)
  • 700 g ice cubes (large block ice cubes)
  • 6 tbsp sugar
  • e.g. lemon juice, alternatively peach or strawberry syrup etc.

First, boil the water, then steep the tea bags in it for 5 minutes. While the tea is brewing, add the ice cubes to a pitcher. Once the tea is ready, remove the bags and pour the hot tea over the ice cubes. It’s important to use enough ice cubes, as this is the only way the tea can cool quickly. If the tea cools too slowly, too many bitter flavors will develop, and the tea will lose its flavor. Once the tea is ice-cold, add the sugar and stir well. Add flavorings as desired. For example, for lemon iced tea, add 1 1/2 tablespoons of lemon juice; for peach iced tea, add 4 1/2 tablespoons of peach syrup (available in bar supply stores and well-stocked supermarkets), and for strawberry iced tea, add 3 tablespoons of strawberry syrup.
