King prawns with basil oil

Ingredients for 4 servings:

  • 12 king prawns, deveined, peeled
  • 8 tbsp olive oil
  • 1 bunch of basil
  • 2 cloves garlic, peeled, finely diced
  • 16 tomatoes (cocktail tomatoes)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and drain the shrimp. Purée the basil leaves with 4 tablespoons of olive oil in a blender or with a hand blender and season with salt and pepper. Cut the shrimp into a butterfly shape, fry in 4 tablespoons of oil and the garlic in a non-stick pan over medium heat for about 6 minutes. Halve or quarter the tomatoes, depending on their size, then add them to the shrimp and cook for 1 minute. Serve the oil separately or drizzle over each serving. Vanilla onions (also found in my recipes) go perfectly with this dish.
