Kumquat jam

Ingredients for 1 servings:

  • 1 kg kumquat(s)
  • 1 kg gelling sugar
  • orange juice

Wash the kumquats thoroughly, then cut them crosswise (not lengthwise) and scoop out the seeds (crosswise is easier with a sharp knife or similar). I then cut about 200g into very thin strips (the fruit is processed with the skin on). I roughly chop the rest with a hand blender. I mix the entire mixture with the gelling sugar and let it stand in a cool place overnight. The next day, when the mixture has become very stiff, I add a little orange juice. I bring everything to a boil in a large saucepan and simmer for about 3 minutes. Then transfer the mixture to attractive screw-top jars and let it rest upside down. Since kumquats are very expensive, you can also make them with just a pound of fruit, then reduce the sugar.
