Little Banana Pancakes

Ingredients for 3 servings:

  • 100 g flour
  • 75 g oat flakes, fine
  • 250 ml milk
  • 2 m.-sized banana(s)
  • 3 eggs
  • 1 pinch of salt
  • olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Separate the eggs. Mash or puree the bananas. Combine the flour, oats, milk, egg yolks, and bananas to form a smooth batter. In a separate bowl, beat the egg whites until stiff peaks form, adding a pinch of salt. Fold the egg whites into the smooth batter to make it nice and fluffy. Heat a large frying pan and brush with olive oil. Place small “heaps” of batter into the pan. Fry the pancakes until golden brown on both sides. Enjoy while still warm! Honey, of course, goes wonderfully with the batter!
