  • Cocoa powder

winter cocoa with spices

Heat the cardamom, anise, and cloves in a non-stick pan without fat until they begin to smell. Loosen the spices in a mortar and pestle (do not grind them too finely). Place the spices in a tea infuser and bring to a boil with the milk. Continue to steep the spiced milk, but do not allow it to boil again. Remove the tea infuser and spices from the milk. Meanwhile, finely grate the chocolate. Stir enough cocoa powder into the milk until it turns a nice dark color. Add the grated chocolate and stir well. Add the honey and season with ginger and cinnamon to taste. Transfer to a mug, add a dollop of cream, and sprinkle with a generous pinch of cinnamon, if desired, then serve.
