Mascarpone cream

Ingredients for 6 servings:

  • 500 g mascarpone
  • 5 eggs, including the yolk
  • 5 eggs, of which the egg whites
  • 2 tbsp sugar
  • 1 vanilla pod(s)
  • 1 shot of Marsala or maple syrup
  • 250 g cream
  • 5 drops of oil (peppermint oil)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the mascarpone with 5 egg yolks, 2 tablespoons of sugar, and 1 vanilla pod until fluffy, then stir in a dash of Marsala or maple syrup (I personally prefer delicious Italian Marsala ;o)). – Stir for a long time! Whisk the egg whites until stiff peaks form and carefully fold into the cream. Whip the cream until stiff peaks form, fold into the cream, and season with about 5 drops of peppermint oil. Chill. The time depends on your taste; whether you want it a little smoother or a little firmer, just try it out ;o) Enjoy!
