  • 1 lemon(s), untreated
  • 2 stalk(s) cinnamon

  • 3 tbsp sugar, or possibly honey
  • some cardamom

from Franconia

Pour the red wine into a saucepan, squeeze the lemon, grate the zest, and add it to the pan along with the sugar, cinnamon sticks, and cloves. Heat until just before boiling, then cover and let it steep for about an hour. Important tip: The mulled wine should only be heated, not boiled! Otherwise, the alcohol in the mulled wine will evaporate, and the spices will change their flavor and become bitter. Finally, the mulled wine is refined with cardamom, and the larger spices such as cinnamon sticks and cloves are removed. To minimize the loss of heat, it is advisable to pour the mulled wine into preheated glasses. You can decorate the glass with a cinnamon stick or a thin slice of lemon on the rim of the glass. You can sweeten the mulled wine with sugar or honey, depending on your taste.
