Onion and garlic dip

Ingredients for 3 servings:

  • 1 large onion(s), red
  • 3 garlic cloves
  • 3 tbsp extra virgin olive oil
  • 2 tbsp mayonnaise
  • 1 tsp tomato paste
  • salt and pepper
  • 1 handful of chervil

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

with grilled or pan-fried dishes

Peel the onion and garlic. Dice the onion into tiny cubes. Grate the garlic. Brush both with the oil and let marinate for about an hour. Mix everything with mayonnaise and tomato paste and season with salt and pepper. Finally, stir in a handful of chervil leaves. This dip goes well with grilled or briefly pan-fried meat. It’s also a great spread. For something milder, either use a vegetable onion or heat the onion, garlic, and oil mixture for 30 seconds in the microwave or fry everything briefly in a pan.
