Onion and Leek Cake
The perfect onion and leek cake recipe with a picture and simple step-by-step instructions.
- 2 Fresh leek
- 3 thicker Onions
- 100 g Smoked tofu
- 1 Basic recipe for yeast dough / pizza dough
- 1 Wine glass White wine dry
- 100 g Cashews
- 300 ml Cold vegetable broth
- 1 tsp Agar Agar. Dry product
- Salt, pepper, caraway seeds
- Place the pizza dough in a springform pan and press up the edge.
- Roughly chop the leek and onions. Cut the smoked tofu into cubes and fry in a little oil.
- Add the leeks and onions and sauté for about 5 minutes. Add white wine and simmer until the wine has boiled away. Season with pepper and caraway seeds.
- Puree the cashews with approx. 100 ml of the vegetable stock. Mix agar-agar with the rest of the broth and slowly bring to the boil. Mix with the cashew butter and add to the leek mixture. If necessary, season with salt.
- Pour the mixture onto the dough and bake at 200ºC for about 30 minutes. Cover with aluminum foil after 20 minutes if it turns too brown on top.
