Orange overnight oats with soy yogurt and fruit

Ingredients for 2 servings:

  • 1 tbsp oat flakes, fine
  • 1 tbsp oat flakes, wholegrain
  • 1 tbsp flaxseed
  • 1 tbsp chia seeds
  • 1 large orange(s)
  • 3 tbsp soy yogurt (yogurt alternative), natural
  • 1 handful of strawberries, cut into pieces
  • 1 banana(s), pear and any fruit you like

Instructions

Working time approx. 10 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 10 minutes

Oatmeal for breakfast

Place the oat flakes, flaxseeds, and chia seeds in a sealable container or jam/preserving jar, then squeeze the orange and add the juice. The liquid should be about twice as much as the flakes and seeds, as they will expand. If there isn’t enough juice, you can squeeze another orange or add a little water. Now slice the strawberries and add them to the flakes. I like to pre-slice strawberries, Galia melon, and mango, freeze them, and add a handful to the flake-orange mixture in the evening. Close the container or jar and refrigerate overnight. The next morning, I simply add the yogurt and top with sliced ​​banana, pear, apples, and grapes. You can either enjoy it immediately, or take the container/jar to the office and enjoy it a little later. The oats are rich in fiber, which stimulates digestion and fat burning, and they also keep you full for a long time. The fruit already adds so much sweetness to your breakfast that you don’t need to add any extra sugar.
