Ingredients for 1 servings:

  • 800 g quince(s) (ornamental quince, false quince)
  • 1 liter of water
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 1 hour 4 minutes; Total time approx. 1 hour 44 minutes

Preliminary note: The ornamental quinces should be ripe, meaning they are truly yellow. They are quite sour, which means they can even be used as a lemon substitute. However, they are only distantly related to the “common” quince. Wash and chop the ornamental quinces. Scoop out the seeds with a sharp knife. The cores do not need to be removed! Place the chopped ornamental quinces in a large pot, cover with water, bring to a boil, and simmer for one hour. Purée the fruit with a hand blender until smooth. Then bring the mixture back to a boil. Add the gelling sugar and boil the mixture for 4 minutes. Then fill clean jars to the brim with the jam.
