Ingredients for 2 servings:

  • 140 g flour (wheat flour)
  • 200 ml buttermilk or whey
  • 50 ml carbonated mineral water
  • 1 egg(s)
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

not so filling – only 1 egg for 8 pieces

First, whisk the flour (about 120-140 g) with the buttermilk until smooth. Let it swell briefly. Then whisk in the mineral water and the egg. Immediately bake the thin pancakes in a lightly oiled, hot pan. You can eat them with a sweet filling (apple sauce, jam, Nutella and banana, or quark), for example, and fill the leftovers the next day with something savory, bake them, add them to soup as pancakes, or do something else. We made about 8 nice, thin pancakes. I just grease the pan with a piece of kitchen paper and a little oil; that’s enough. Variation: Add sugar, cinnamon, cocoa powder, tomato paste, chopped herbs, or grated cheese to the batter.
