Pasta Salad – Colorful Summery …

The perfect pasta salad – colorful summery … recipe with a picture and simple step-by-step instructions.

  • 200 g Fork spaghetti
  • 1 small can Peas
  • 1 small can Corn kernels
  • 4 Cocktail tomatoes
  • 2 Hard-Boiled eggs
  • 1 bunch Chives
  • 2 Borage leaves
  • 3 tablespoon Extra virgin olive oil
  • 1 tablespoon White wine vinegar
  • 1 pinch Sugar
  • Salt and pepper
  1. Cook the noodles until they are firm to the bite (i.e. not too soft) and drain in a sieve, then pour into a bowl. Boil the eggs for about 10 minutes and rinse.
  2. Put peas and corn kernels in a sieve and rinse with clear water, then drain well and add to the noodles in the bowl.
  3. Core the tomatoes, peel the eggs and cut both into small cubes, cut the chives into rolls and dice the borage very finely. Add the herbs with salt, pepper, sugar, vinegar and oil to the salad, mix well once, cover and let steep for at least an hour and serve well chilled, then this light salad is pleasantly refreshing.
