Pasta salad with mayonnaise and fried ham cubes

Ingredients for 4 servings:

  • 250 g pasta as desired
  • 1 ½ liters vegetable broth
  • 1 bell pepper(s), red
  • ½ jar pickles
  • 2 shallots
  • 1 small can of peas
  • 1 small can of corn
  • 300 ml mayonnaise, full-fat
  • 2 tbsp cucumber juice
  • 100 g diced ham
  • 2 tbsp olive oil
  • n. B. Pfeffer

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 40 minutes

Cook the pasta in the vegetable broth until tender. In the meantime, dice the bell peppers, cucumbers, and shallots. Drain the peas and corn. Then mix the cucumbers, bell peppers, shallots, peas, and corn with the mayonnaise and cucumber juice. When the pasta has the desired tenderness, drain and let cool. In the same pot, sauté the ham cubes with the olive oil, not too long so they don’t become hard. Mix everything together and season with pepper. You don’t need any more salt, as there is enough in the broth and ham cubes. Let it sit in the refrigerator and then enjoy. Ideal for a barbecue.
