Peanut-banana mug cake with oat flakes

Ingredients for 1 servings:

  • 1 banana(s)
  • 3 tbsp oat flakes, fine
  • 1 tsp peanut butter or peanut puree
  • 2 egg whites
  • Cinnamon
  • Raisins
  • chocolate drops

Working time approx. 7 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 9 minutes

Mash the banana thoroughly with a fork until it forms a smooth paste. Then mix in the oats. I prefer fine oats, but coarse oats will probably work too. Then stir in peanut butter to taste, or for those with a sweeter tooth, add the two egg whites, and stir until a smooth mixture has formed; this will take a while. You can vary the little mug cake with cinnamon, raisins, or other treats to taste, but it tastes good on its own too. Pour the batter into a microwave-safe container and bake in the microwave for about 1.5-2 minutes. I used 1 minute and 40 seconds. When it has set and easily pulls away from the sides, it’s ready. But be careful not to leave it in for too long, otherwise it will dry out. A perfect little snack after exercise or for in between meals, with lots of variations.
