Plum compote made easy

Ingredients for 10 servings:

  • 3 kg plum(s), prepared weighed
  • 3 tbsp, levelled vanilla sugar
  • 3 tbsp, leveled cane sugar
  • 3 tbsp lemon juice
  • 300 ml red wine
  • 1 cinnamon stick(s)
  • 4 carnations
  • 1 star anise
  • 1 mace

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 42 minutes

Makes 10 glasses

Prepare the plums and halve them. Place the spices in a tea bag and tie a knot. Place it in a large pot along with the remaining ingredients except the plums and bring to a boil. Simmer for 4 minutes, then add the plums and bring to a boil, stirring frequently. Cook for about 7 minutes. Remove the spice bag. Transfer the plums to prepared jars and seal. If you want to be extra safe, you can also preserve the plum compote, but I don’t do that; the plums will keep for at least 3 months as they are.
