Chocolate coconut cubes without milk and eggs, suitable for Lent
Mix the flour with the baking powder, add the sugar, and stir into a smooth batter with vegetable oil and water. Spread onto a greased baking sheet (or a large round pan, 32 cm in diameter) and bake at approximately 180°C for approximately 20-30 minutes (test with a skewer). Once cooled, cut the dough into cubes (approx. 3 x 3 cm). In a small saucepan, mix the cocoa with the sugar and stir with 100 ml of water until smooth, then heat. Once the cocoa mass has melted, add the vegetable margarine and stir continuously to create a smooth chocolate coating. Dip each cube into the chocolate coating and then roll in the desiccated coconut until all sides are coated. This recipe is especially suitable for Lent, when no animal products are consumed. I recommend keeping spare ingredients for the coating on hand in case there isn’t enough for all the cubes, so you can make another one in between.
