Potato soup according to grandma's recipe

Ingredients for 4 servings:

  • 80 g bacon
  • 100 g onion(s)
  • 500 g soup vegetables
  • 800 g floury potatoes
  • 2 pinches of salt
  • 1 pinch(s) of pepper
  • 1 pinch of marjoram
  • possibly lovage
  • some oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Dice the bacon. If there is rind on the bacon, trim it off or fry it with the bacon. Add a little oil to the pot and add the bacon cubes. Peel the onions, also dice them, and add them to the pot, stirring occasionally and frying briefly. Peel the carrots and celery, dice both, and add them to the pot with the other ingredients. Sauté briefly. In the meantime, peel the potatoes and cut them into large cubes, and add them to the pot. Stir and add enough water to cover everything. Season with salt and pepper. Put the lid on the pot and simmer for about 15 minutes, until the potatoes and vegetables are tender. Add a little more water if necessary. Halve the leek lengthwise, wash it, and cut into fine strips. Finely chop the parsley. Mash the potato soup with a potato masher and bring back to the boil, stirring occasionally. Turn off the heat, add the leek, parsley, and marjoram (or lovage if desired), and stir in. Taste the soup and adjust the seasoning if necessary.
