Ingredients for 1 servings:

  • 2 quinces
  • 1 lemon(s)
  • 1 tbsp butter
  • 60 g sugar
  • ½ vanilla pod(s)
  • 20 g ginger, grated
  • 100 ml white wine, sparkling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

tastes great with duck liver or goose liver crème brûlée

Peel and core the quinces, cut them into small cubes, and mix with the lemon juice. Heat the butter and caramelize the sugar. Add the quince cubes, vanilla pulp, ginger, and white wine and bring to a boil. Divide the mixture among jars and simmer at 100°C for 40 minutes.
