Red Wine Cake According to Elke’s Recipe

- 4 Eggs separated – size M
- 1 packet Vanilla sugar
- 300 g Soft butter
- 300 g Extra fine sugar
- 1 pinch Salt
- 250 g Flour
- 50 g Mondamine powder
- 1 packet Baking powder
- 2 teaspoon Unsweetened cocoa
- 1 teaspoon Ground cinnamon
- 125 ml Dry red wine
- 200 g Grated chocolate
- Butter for the mold
- Breadcrumbs for the mold
- Brush a wreath shape well with butter and sprinkle with breadcrumbs. Separate the eggs, beat the egg whites with the vanilla sugar until stiff and then set aside. Sieve the flour with mondamin, baking powder and cinnamon. Preheat oven to 175 degrees.
- Beat the very soft butter with the sugar and a pinch of salt until you have a creamy-white mixture. Gradually fold in the egg yolks – for about half a minute for each egg.
- Stir the flour mixture into the batter, alternating with the red wine and the grated chocolate, and finally fold in the egg whites. Put everything in a wreath form and bake the cake on the 2nd rack in the middle of the oven for about 50 to 60 minutes.
