Ingredients for 4 servings:

  • 1 kg pork (neck or rib)
  • 1 onion(s)
  • 2 carrots
  • 1 stalk(s) leek
  • 1 tsp caraway seeds
  • some oil for frying
  • 200 mg water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 15 minutes

Franconian

Season the meat generously with salt and a little less pepper. Heat a little oil in an ovenproof roasting pan and sear briefly on all sides. Then add the quartered onion and the roughly chopped leek and carrot and sear briefly. Deglaze with water and add the caraway seeds. Bake in the oven at 180°C for about 2 hours. Baste the meat occasionally with the sauce. Serve with potato dumplings.
