Ingredients for 1 servings:
- 200 g hazelnuts
- 200 g sugar
- 1 packet of vanilla sugar
- 125 ml water
- e.g. cinnamon

very simple and delicious, not only at Christmas time
First, line a baking sheet with parchment paper, onto which you can spread the roasted hazelnuts as they come out of the pan. Take a large pan and add the sugar, vanilla sugar, and water. Bring everything to a boil over high heat (please do not stir). Now add the hazelnuts. Stir until all the water has evaporated. So leave the stove on high. When all the water has evaporated, the hazelnuts will look whitish. The sugar will stick dryly to the nuts and the pan. Now reduce the heat to medium and continue stirring. You have to stir the hazelnuts in the pan the whole time; after a while, the sugar will begin to caramelize. The nuts are ready when they have a nice shine. Transfer the mixture to a baking sheet. Once the roasted hazelnuts are on the baking sheet, try to separate them with two forks. If some are still stuck together, it’s okay; you can easily separate them once they’ve cooled. Tip: For roasted almonds, use the same recipe, but use almonds instead of hazelnuts.
