Sheep's cheese – antipasti

Ingredients for 12 servings:

  • 1 kg sheep’s cheese, roughly diced
  • 12 Pepper, pickled, mild
  • 12 cherry tomatoes, halved
  • 2 sprigs rosemary
  • 1 bunch of thyme
  • 8 tbsp olive oil
  • 200 g black olives (dry pickled)
  • Pepper, coarsely ground
  • possibly garlic

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Can be prepared 2 days in advance, suitable for parties.

Mix all the ingredients in a sufficiently large jar with a screw lid. Then, just cover and let it sit in the refrigerator. It will easily keep for a week in the refrigerator. It’s always a hit at parties with fresh farmhouse bread or pain de campagne. Alternatively, you can first roast the herbs (and perhaps a few garlic cloves) in olive oil.
