Soup: Sugar Pea Soup
The perfect soup: sugar pea soup recipe with a picture and simple step-by-step instructions.
- 400 ml Poultry stock / vegetable stock
- 4 cl Noilly Prat
- 400 ml Cream
- 200 g Sweet peas
- 0,5 bunch Parsley crispy fresh
- 50 g Ice cold butter
- Salt and sugar
- Reduce the wine, then add the stock and the cream, bring to the boil, then bring the peas to the boil and puree in the mixer with the parsley. Then mix in the butter, pass through a sieve and bring to the boil again. Season with salt and sugar.
- For the vegetarian variant, use vegetable stock instead of poultry stock.
