Sour cherry – chocolate – chili – jam

Ingredients for 1 servings:

  • 1,500 g sour cherries, pitted
  • 2 bars of chocolate (85% cocoa content)
  • 1 chili pepper(s), red
  • 2 pinches of cinnamon
  • 1 sachet of vanilla sugar
  • 500 g gelling sugar, 3:1

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Clean and pit the sour cherries and mix with the listed ingredients. I only partially deseeded the chili pepper, chopped very finely, and added it to the cherries. If you want it even spicier, you can add all the chili seeds. Then heat everything up and bring to a boil with the preserving sugar according to the instructions. Immediately fill into rinsed, hot twist-off jars and seal. The flavor is just as I did it: a balanced balance of sweetness, acidity, and spiciness.
