Spaghetti with tofu bolognese

Ingredients for 4 servings:

  • 400g spaghetti
  • 200g tofu
  • 1 can tomatoes, chunky, or homemade tomato sauce
  • n. B. olives
  • 2 tbsp olive oil
  • 1 garlic clove(s)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

simple, but be careful that the sauce finishes with the spaghetti

Squeeze out the tofu (preferably with a tea towel). Transfer it to a tall container (I always use a measuring jug). Mash it with a fork until it forms pieces similar to minced meat. Heat the salted water for the spaghetti in a pot and cook the spaghetti. Meanwhile, heat the olive oil in a pot and add the tofu mince, frying for about 5 minutes. Then add the diced onion and garlic clove, frying for another 5 minutes. Add the canned tomatoes and the olive halves, season with salt and pepper, and simmer until the spaghetti is cooked al dente.
