- 2 eggs
- 50 g brown sugar
- 1 pinch of cinnamon
- 25 ml milk
- 75 ml rapeseed oil
- 100 g spelt flour
- 1 tsp, heaped baking powder
- 3 tbsp brown sugar
- 2 pinch(s) cinnamon

The oven should be preheated to 170 degrees Celsius (350 degrees Fahrenheit) – the temperature may vary depending on your oven. First, place the eggs, sugar, and cinnamon in a bowl (the ingredients are listed above in the order they are needed). Beat the three ingredients for about one minute until frothy. Then, slowly add the milk with a hand mixer, followed by the oil. Next, combine the flour and baking powder and add to the egg mixture; mix well. Line a muffin tin with paper baking cups and fill the cups with the batter. It’s important to fill them two-thirds full so the muffins stay relatively flat. Now, mix the remaining sugar with the cinnamon, and then sprinkle this mixture evenly onto the muffins with your fingers. The muffins are now ready for the oven. Bake for about 20 minutes.
