Spice marinade for pork on a spit

Ingredients for 1 servings:

  • 1 liter rapeseed oil
  • ½ liter red wine, sweet
  • 3 tbsp thyme
  • 3 tbsp paprika powder
  • 2 tbsp garlic powder
  • 2 tbsp salt
  • 2 tbsp caraway powder
  • 1 tbsp pepper
  • 4 bay leaves
  • 1 tbsp allspice
  • 1 tbsp rosemary

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Total time approx. 1 day 10 minutes

Mix all ingredients thoroughly in a container and let marinate for 24 hours. Using a craft knife, score the pork rind into approximately 5×5 cm squares so the marinade can penetrate the meat. Apply the marinade repeatedly to the pork with a long-handled brush until the pork is finished grilling. Tip: Sprinkle the pork with salt beforehand or brine it. This marinade is enough for one pig for 25 servings.
