Ingredients for 4 servings:

  • 1 ½ kg jacket potatoes, mashed
  • 3 eggs
  • 250 ml milk, hot
  • 100 ml oil
  • 2 tbsp flour
  • 4 large onions, chopped
  • Salt
  • 500 g dough (rye bread dough, alternatively pizza dough)
  • Bacon, diced (fatty bacon) or Mettwurst pieces
  • poppy
  • Caraway, whole and ground

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Potato cake on bread dough my mother’s way

Blend the boiled potatoes, eggs, milk, flour, oil, and onions until smooth and season with salt and ground caraway seeds. Roll out the bread dough on a greased baking sheet. Pour the potato mixture onto the dough, smooth it out, and use a fork to make shallow grooves in the dough. Drizzle with oil (without oil, it won’t brown as beautifully on top!). Sprinkle with caraway seeds and/or poppy seeds, if desired, and scatter bacon cubes or pieces of Mettwurst sausage on top. Bake at 220°C for about 35 minutes. Friends call this an Upper Hessian pizza. We always pre-order the dough from the bakery, but pizza dough works too.
