Sweet potato stew with smoked salmon and pear

Ingredients for 2 servings:

  • 350 g sweet potatoes
  • 1 onion(s), red
  • 170 g leek
  • 2 tbsp oil
  • 200 g Kassel salmon, mildly smoked
  • 350 ml chicken stock
  • 1 pear(s), solid
  • Salt
  • Pepper, green, from the mill
  • 1 pinch(s) cinnamon powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

A recipe for two

Peel and dice the potatoes and onion, and slice the leek into rings. Heat the oil in a large pot over medium heat and sauté the finely chopped vegetables for 3 minutes. Cut the meat into strips, add it to the pot with the broth, season with salt and pepper, and simmer covered over low heat for about 12-15 minutes, until the potatoes are tender. Peel, core, and dice the pear, then stir into the stew for the last 2 minutes with a pinch of cinnamon. Arrange on a plate or in a bowl, garnish, and serve.
