Swiss Chard with Boiled Potatoes & Fried Egg.

The perfect swiss chard with boiled potatoes & fried egg. recipe with a picture and simple step-by-step instructions.

blanch, go crazy:

  • 2 Pc. Swiss chard fresh
  • 1,5 liter Salted water

ferment:

  • 1 Pc. Butter
  • 1 Pc. Diced onion
  • 1 tablespoon Flour
  • 1 shot Vegetable broth
  • 100 ml Liquid cream
  • 1 pinch Freshly grated nutmeg
  • Coarse salt
  • White milled pepper

Garnish :

  • 4 Pc. Free range eggs
  • 1 Pc. Butter
  • Salt
  • Black pepper from the mill
  • 500 g Peeled waxy potatoes
  • 1 liter Salted water

Processed like spinach in the Palatinate!

  1. Clean and wash the chard, cut into small pieces. Separate by stem and leaves.
  2. First blanch the stems for about 5 minutes, then add the leaves and cook for another 1 minute, quench, let cool.

Go berserk:

  1. Turn the vegetables through the meat grinder.
  2. Sweat the onion in hot butter until translucent, add the flour, stir briefly, deglaze with vegetable stock & or just cream, season.

Potatoes:

  1. Cook in salted water for approx. 20 minutes, drain.

Fried eggs :

  1. Fry them in butter until crispy.
