blanch, go crazy:
- 2 Pc. Swiss chard fresh
- 1,5 liter Salted water
ferment:
- 1 Pc. Butter
- 1 Pc. Diced onion
- 1 tablespoon Flour
- 1 shot Vegetable broth
- 100 ml Liquid cream
- 1 pinch Freshly grated nutmeg
- Coarse salt
- White milled pepper
Garnish :
- 4 Pc. Free range eggs
- 1 Pc. Butter
- Salt
- Black pepper from the mill
- 500 g Peeled waxy potatoes
- 1 liter Salted water
Processed like spinach in the Palatinate!
- Clean and wash the chard, cut into small pieces. Separate by stem and leaves.
- First blanch the stems for about 5 minutes, then add the leaves and cook for another 1 minute, quench, let cool.
Go berserk:
- Turn the vegetables through the meat grinder.
- Sweat the onion in hot butter until translucent, add the flour, stir briefly, deglaze with vegetable stock & or just cream, season.
Potatoes:
- Cook in salted water for approx. 20 minutes, drain.
Fried eggs :
- Fry them in butter until crispy.
