Tanja's strawberry-kiwi jam

Ingredients for 1 servings:

  • 600 g strawberries, fresh
  • 400 g kiwi(s)
  • 50 ml lemon juice, fresh or from an organic bottle
  • 1 pack of gelling sugar 2:1
  • 1 vanilla pod(s)

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 25 minutes

Remove the greens from the strawberries and wash them. Peel and finely chop the kiwis. Puree both with the lemon juice and fold in the gelling sugar. Split the vanilla pod lengthwise and scrape out the seeds. Add the seeds and pod and let stand for about 2 hours. Bring the entire mixture to a boil in a saucepan, then simmer gently for about 4-8 minutes. Pour everything into jars with screw caps, seal, and let stand upside down for at least 5 minutes to allow the lids to tighten properly. This makes enough for 5 jars of 250 ml each and will keep for about 1 year.
