Tomato – Basil – Pesto

Ingredients for 1 servings:

  • 100 g tomatoes, dried
  • 50 g Parmesan, freshly grated
  • 50 g black olives
  • 50 g pine nuts
  • 50 ml water
  • 1 tbsp tomato paste
  • 1 clove(s) garlic
  • 100 ml olive oil
  • 1 bunch of basil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely chop the tomatoes, olives, pine nuts, and basil. Mix the tomato paste with water and add the chopped ingredients. Press the garlic through a press and stir in. Let this mixture sit for about 15 minutes so the tomatoes can swell and release their flavor. Now add the grated Parmesan cheese and slowly mix in the olive oil with a hand blender. Season to taste with pepper. Add more salt to taste; the olives already have some salt.
