Tomato-mozzarella bread salad

Ingredients for 4 servings:

  • 1 tbsp butter
  • 40 pine nuts
  • 2 large slices of toast or equivalent amount of baguette or roll
  • 2 balls of mozzarella
  • 300 g tomatoes or cherry tomatoes
  • ½ avocado(s)
  • 1 handful of basil leaves
  • Salt
  • Spice mix (tomato-mozzarella)
  • Balsamic cream
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Prepare a bowl for all the ingredients. Melt the butter in a pan and toss the pine nuts in it over medium heat. Meanwhile, finely dice the bread or rolls. When the pine nuts are slightly browned, add them to the bowl and toast the bread cubes in the pan, adding a little olive oil if desired. The bread should become a little crispy. Cut the mozzarella, tomatoes, and avocado into small cubes and add them to the bowl along with the bread cubes. It’s important to me that everything isn’t cut too big so that you can get all the flavors in your mouth with a spoon. Tear the basil into the bowl and season the salad with salt, tomato and mozzarella seasoning, balsamic vinegar, and olive oil, and toss thoroughly. Tip: Ideally, let the salad stand for a few minutes before serving, but you can of course eat it straight away.
