Tuscany Bread Salad >>

- 250 g Tomatoes
- 1 Onion red
- 2 tbsp Extra virgin olive oil
- 1 tsp Freshly squeezed lemon juice
- 1 tbsp Balsamic vinegar
- Red wine salt
- Colorful pepper
- 0,25 Pc. Baguette
- 1 Clove of garlic
- Basil leaves
- 50 g Mozzarella
- Freshly grated Parmesan
- Wash the tomatoes, remove the stalk and cut into cubes. Clean and cut the onion into rings and mix both in a bowl. Prepare a sauce with balsamic vinegar, salt, pepper and lemon juice. Mix with the olive oil and stir or shake into a vinaigrette. Mix with the salad and let steep for 30 minutes.
- Cut the baguette into slices and roast in the oven or grill. Freshly grate the Parmesan cheese and spread it on one side of the bread. Put bread briefly under the grill again so that the cheese melts. Clean the garlic and cut in half. Rub the other side of the bread with the cut surface. Cut the basil leaves into fine strips. Also cut the mozzarella into fine slices.
- Cut the bread into cubes and fold into the salad with the basil and mozzarella just before serving. Serve immediately so that the bread cubes stay crisp.
