Wiener-style Schnitzel with Roasted Onions and Fried Potatoes

schnitzel

  • 4 Pork schnitzel
  • 2 Eggs
  • Panko
  • Breadcrumbs
  • 1 shot Milk
  • 1 pinch Salt

roasted onions

  • 4 Onions
  • 4 tbsp Flour
  • 2 tbsp Butter
  • Salt
  • 1 tsp Sugar

fried potatoes

  • 0,5 Onion red
  • 1 Spring onion
  • 6 Potatoes
  • 10 Mushrooms
  • Extra virgin olive oil
  • Black pepper from the mill
  • Sweet paprika powder
  • Salt
  • 1 tsp Honey

roasted onions

  1. Peel the onions and cut into rings. Put the butter, salt and sugar in a pan, sweat. As soon as the onions are translucent, add flour and roast everything until golden brown.

  1. Cover the meat with cling film and plate – season with salt and pepper. Whisk eggs with milk, salt and pepper. Mix the panko and breadcrumbs (half and half) with a little salt. Heat a pan with vegetable oil.
  1. Roll the meat first in the egg mixture and then in the panko. Repeat again and fry in the hot oil until golden brown.

fried potatoes

  1. Cut the onion and spring onion into thin rings – thinly slice the potatoes. Halve the mushrooms. Roast the potato slices in olive oil with a little honey and add the onions and mushrooms, roast everything vigorously.
  1. Season with salt, pepper and paprika powder and add the spring onions.
