Ingredients for 1 servings:
- 3 kg zucchini
- 2 jars of onion(s) (shell onions)
- 2 onions, finely diced
- 8 bell peppers, various colors
- 600 g sugar
- 750 ml vinegar
- 3 tbsp mustard
- 4 tbsp flour
- 3 tbsp curry powder
- 1 tsp cayenne pepper
- 3 tbsp paprika powder, hot
Instructions
Working time approx. 45 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 45 minutes
Dice the zucchini, season well with salt, and let stand overnight. Then squeeze out any excess water. Cook the zucchini, shallots, onions, 6-8 bell peppers, sugar, vinegar, and mustard for a good half hour. Mix the flour with a little cold water, then stir in the curry powder, cayenne pepper, and 2-3 tablespoons of hot paprika. Cook for another 10 minutes. Immediately fill jars and let stand upside down for 5 minutes. Store in a cool place.
