Carrot and cream cheese pasta

Ingredients for 4 servings:

  • 1 onion(s)
  • 300 g carrot(s)
  • ½ bunch flat-leaf parsley
  • 1 tbsp butter
  • 1 tsp curry powder, mild
  • salt and pepper
  • 200 g pasta (wholemeal)
  • 100 g cream cheese
  • 150 ml milk, 1.5% fat

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook pasta according to package instructions. Finely dice onion. Trim and peel carrots, and cut into 3 cm sticks. Roughly chop parsley. Heat butter in a pan and sauté onion for 2 minutes. Add carrots, curry, and salt and sauté for 5 minutes over medium heat. Add parsley, cream cheese, and milk to the carrots, stirring evenly, and bring to a boil. Season sauce with salt and pepper.
