Ingredients for 4 servings:

  • 6 tomatoes, possibly more, up to 8
  • 1 small cucumber(s)
  • 2 onions
  • 1 bunch of parsley
  • 2 handfuls of olives, black
  • 2 lemons, juice
  • 1 pinch(s) of sugar, possibly more
  • 6 tbsp olive oil
  • Salt and pepper from the mill

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Total time approx. 35 minutes

like my Turkish neighbor makes it

Halve the tomatoes, remove the stems, and cut each into eighths. Halve the cucumber lengthwise, scrape out the seeds, and slice like the peeled onions. Roughly chop the washed parsley. Combine everything in a bowl with the olives and mix. Season the lemon juice with salt, pepper, and sugar, then stir in the oil. Pour over the salad and let it sit in the refrigerator for about 20 minutes.
