Meatloaf with feta and tomato filling

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 large onion(s)
  • 1 slice(s) toast bread, whole grain
  • 2 m.-sized eggs
  • 1 clove(s) garlic
  • oil
  • salt and pepper
  • 2 large tomatoes
  • 100 g feta cheese
  • n. B. herbs, Italian

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Dice the onion and garlic and tear the whole-wheat toast into small pieces. Mix everything into the minced meat, add the eggs and about 2 tablespoons of oil, and season with salt and pepper. Form the mixture into a loaf in an ovenproof dish. Make a groove in the top for the filling. For the filling, dice the tomatoes and mix with the feta. Mix in about 1 tablespoon of oil and season with pepper and, if desired, Italian herbs. Pour the slightly creamy mixture into the groove. Cook in a preheated oven at 180°C for about 45 minutes. The cooking time varies depending on the thickness of the meatloaf. Tomato sauce goes well with it.
