Drunken cakes – recipe from the Greek island of Amorgos

Mix the flour and baking powder and sift into a bowl. Make a well in the center and add the salt. Pour in the white wine and mix lightly by hand. Now, slowly and constantly, knead in the oil until the dough comes away from the bowl without sticking (do not add more oil than you need, even if some remains). Scoop out portions of dough with a spoon, knead briefly between your palms, form small balls, and flatten them. Place on a baking sheet well greased with butter or lined with baking paper. Place a dollop of apricot jam on each of the dough and seal the cakes into a ball shape. Bake at 180-200 degrees Celsius for 15-20 minutes. Sprinkle with powdered sugar while still warm. This recipe is easy to adapt. For example, you can add ground walnuts and raisins to the apricot jam (or other flavors if desired).
