tart orange marmalade with Aperol and ginger, makes about 6 jars

Wash the oranges thoroughly, peel the orange top layer from the zest, and finely slice. Alternatively, use a zester. Remove the white pith from the orange flesh, inside and out, and then finely slice. Place the orange zest, pulp, and ginger powder in a saucepan, squeeze the lemon, and add it. Add the gelling sugar and simmer for about 20 minutes, stirring constantly. Finally, add a glass of Aperol and briefly chop everything with a hand blender, but not too finely. Ladle into prepared jars.
